Curried Spare Ribs
In the Caribbean, we curry everything, spareribs included. This recipe will have you licking your fingers and have everyone asking for seconds. Although amounts are given in this recipe, I suggest you adjust the flours to make it your own.
Ingredients you will need:
- 1lb Spare Ribs
- 1/2 cup green seasoning
- 2 Teaspoons hotsauce
- 1 Onion
- 1 Carrot (peeled)
- 4 cloves Garlic, garlic
- 1 Sweet Pepper
- 2 Tablespoons Grated Ginger
- 2 Teaspoons Curry Powder
- Cornstarch slurry (1/2 cup cornstarch mixed with 1/2 cup water)
- 2 Tablespoons Oil (for frying)
Method:
- Chop sweet pepper, garlic and onion
- Mix curry, soy sauce and seasoning and place ribs in mixture, leave overnight.
- Heat Wok and add 1 tablespoon of oil
- Remove ribs from spice mix, and dip in cornstarch mixture.
- Place in heated wok and stir fry.
- Add remaining seasoning sauce to wok
- Add chopped vegetables and let simmer for 5 minutes
- Add hot sauce and remove from heat
- Serve with your favorite rice.

I was attempting to make the curried spare ribs but got a little confused. There is no mention of soy sauce or measurements in the ingredients, but it says to add it in the method section.
