Guinness Sweet Bread

This is one of my favorite recipes. If there was one thing I was allowed to eat for the rest of my life, I'd probably choose this. The taste and texture is everything you want from a dessert, the sugar and the stout give you enough energy for this to replace your breakfast muffin. Like most Caribbean desserts, it's dense and moist and there's happiness in every bite.

Ingredients you will need:

  • 1/2 Guinness (or your favorite stout)
  • 2 Eggs
  • 1 Cup Sugar 
  • 4 cups Flour
  • 1 Cup mixed peel
  • 4 teaspoons baking powder
  • 8 oz. Margarine
  • 2  teaspoons grated mixed spice (or use 1 tsp essence)
  • 2  teaspoons grated nutmeg (or use 1 tsp essence)
  • 1 Cup grated coconut 
  • 1 Cup currants
  • 1/4 Cup simple syrup

Method:

  1. Measure and sift dry ingredients
  2. Rub in margarine until mixture looks like breadcrumbs
  3. Add Sugar, grated coconut, mixed peel and currants
  4. Beat eggs with essence, and with stout add to mixture
  5. Pour mixture into a greased tin
  6. Bake at 400 degrees for an hour until brown
  7. When finished baking, brush top with simple syrup
