Spicy Chicken and Rice
This recipe requires a slow cooker. Slow cookers are great for people who require a bit of flexibility while cooking. This recipe is easy enough to toss together and eat when you get home later.
Ingredients
- 1 1/2 pounds chicken
- 2 medium green peppers, chopped
- 2 stalks celery, chopped
- 1 medium onion, chopped
- 3 cloves garlic, finely chopped
- 1 tsp pimento pepper powder
- 3/4 tsp salt
- 1/2 tsp ground cumin (geera)
- 1/4 tsp Moruga Red pepper
- 3 cups brown rice
- 1 can black beans, rinsed and drained
Directions
- Season chicken with garlic, pepper, salt and cumin.
- Place chicken in slow cooker with vegetables, beans and rice.
- Cover and let cook for 5 to 6 hours until chicken is cooked through.
- Garnish with chopped chive
